The Lansing Entertainment and Public Facilities Authority (LEPFA) seeks a creative, energetic, visionary culinary leader to fill our Executive Chef position. LEPFA’s Executive Chef is a team leader responsible for the management, general administration, coordination, training and supervision of our premier culinary staff and steward services. Our dynamic Executive Chef insures that LEPFA’s contractual Food and Beverage services are provided in an efficient, effective, safe and timely manner. Position is responsible for the overall planning, organizing, controlling and monitoring of food and beverage kitchen activities and staff to ensure the overall appearance and integrity of the facility, banquet and culinary activities, food quality, and atmosphere in order to provide a superior food and beverage experience for all LEPFA sponsored, managed/produced events and properties. Our Executive Chef assists in the development/ implementation of LEPFA culinary staff, our organizational and departmental policies and procedures designed to promote efficiency and quality of service within the Food and Beverage Department.
OVERVIEW OF ESSENTIAL ROLES & RESPONSIBILITIES:
Develop and implement long term and day-to-day operational policies, procedures, systems and standards for the LEPFA Food and Beverage kitchen and provide overall administrative supervision.
Manages the planning, organizing, scheduling, assigning, monitoring, analyzing and correcting all work assignments of the Sous Chef, kitchen personnel and related kitchen activities at the Lansing Center and LEPFA sponsored, managed/produced events and properties.
Develops and implement standard recipes and techniques for food preparation and presentation to help ensure safety, consistency in quality and portion control standards, minimizing waste, food cost, payroll costs, and other kitchen related costs.
Participates in the interviewing, hiring, training, coaching, disciplining, performance review and development of the Sous Chef, kitchen and steward personnel in accordance with established LEPFA guidelines, policies and procedures.
Assists in the development and planning of long-term capital improvements with the vision of providing superior Kitchen operations as a customer service “product.”
Assists in developing the annual Food and Beverage capital improvement budget process with the Vice President of Food and Beverage.
Assists in the oversight of approved capital projects for the Kitchen operations, ensuring compliance with all applicable local, state and federal codes, laws and sanitary practices.
Participates in departmental budget development and meetings; and provides expense projections for Kitchen related expenses and revenues.
Assists in monitoring of departmental costs/expenses including verification of proper coding of departmental purchases to ensure accurate accounting and provide sufficient data for planning.
Review and update of all LEPFA, special events and affiliated facilities food menus and pricing in order to provide menu related recommendations based on cost effectiveness and the latest industry trends to the Vice President of Food and Beverage.
Manages regular kitchen-related inspections to evaluate facilities, equipment, personnel, general activity and share findings and observations with the Vice President of Food & Beverage to assist in maintaining a superior level of function, presentation and efficiency.
Review and recommend equipment, materials and supplies required to provide food and beverage services.
Manage, conduct and maintain performance evaluation and professional development programs for subordinate personnel in conjunction with the Vice President of Food and Beverage.
Manages subordinate staff in consultation with the Vice President of Food and Beverage in accordance with organization and departmental policies, guidelines, and procedures.
Works effectively with local bargaining stewards and business agents ensuring compliance with applicable collective bargaining agreements.
Manages work activities of all kitchen contract vendor services and ensures completion and accurate billing of contract vendor services.
Participates in industry related associations and trade shows to keep abreast of industry innovations and improvements and recommends improvements in in the Food and Beverage operations.
Manages all kitchen-related expenses including but not limited to food costs, payroll costs, supply costs, utilities, maintenance, etc.; and provide documented solutions for cost areas that exceed budgeted targets.
Assists in establishing, communicating and executing the proper levels for food and non-food products and supplies. Oversees bi-monthly physical inventories to determine monthly cost of goods.
Oversees ordering of food products and supplies as needed, receiving deliveries, proper storage, labelling and handling in compliance with local, state and federal health standards, codes and guidelines.
Manages daily food preparation, production, plate-up and plate-out, while ensuring that established food quality and presentation standards are consistently met.
Position requires irregular schedules, including evenings, weekends and holidays. The performance of work assignments may not be directly related to job specifications. Adjustments of shifts, breaks, etc., may be required upon short notice.
